mini key lime pies with whipped cream and fresh coconut.
yes i toasted fresh shredded coconut meat, it’s pretty crazy how the flavors change when toasted. after pre-baking the crusts i realized that the recipe called for mini cupcake tins, when i used real ones. tried correcting by double up some crusts, kinda ruined em. they tasted great, but the crusts fell apart real easy and they were real messy which was a bummer.
i’ve always heard granola bars were easy to make and totally awesome. found this recipe and it seemed like a winner. after reading some comments i also added a barely browning banana, about 1/4 cup of honey roasted peanut butter, some nutella, some chocolate chips, some crushed walnuts, a whole cup of raisins and a little extra honey. after making a different test batch, the banana made them super moist and much tastier and aromatic. very excellent! super tasty breakfast cookie!
